Nearly eight years pass before Josko Gravner releases a new vintage of his treasured Ribolla, a cult wine that sits alongside Valentini’s Trebbiano in the pantheon of legendary Italian whites.

Born at the foot of the Alps in far northeastern Italy, Gravner’s wines have been called “some of the most unique being made anywhere on the planet” by Antonio Galloni. Eric Guido also adds that “very few can come close to the magic that is created in this vineyard and cellar.”

But even that wasn’t enough for Josko. And so, after decades of experimentation, he decided to make white wine from only one grape: the indigenous Ribolla Gialla.

He believes Ribolla best expresses his noble terroir—the sandstone-marl slopes of Olslavia—which, in Ian D’Agata’s opinion, is its “unofficial grand cru.” And by mining and perfecting ancient winemaking methods, Gravner’s legendary Ribolla just might be the purest expression of wine this ancient terroir has ever seen.

Among these methods is a long vinification in buried terracotta amphorae, inspired by his early travels to the Black Sea. As he told The New York Times’ Eric Asimov, “You can’t correct the wine once it’s in amphorae. Whatever is good or bad will be amplified.”

And Gravner’s masterful 2015 bottling, rated 96 by Suckling, is among his greatest creations.

Harvested as late as possible to encourage a touch of botrytis, the grapes naturally macerate and ferment in underground, beeswax-lined amphorae sourced from Georgia. After a manual basket pressing, the wine returns to amphora for six months of harmonizing before spending six years in old Slavonian oak botti. It is bottled unfined and unfiltered under a waning moon.

The result is one of the world’s most unique, powerful and kaleidoscopic dry wines. Flaunting a deep amber hue, its aromas shapeshift over many days, and the deep, full-bodied palate provides a nearly endless list of flavors such as exotic spice, poached pear, and oolong tea.
